In a nod to Mexicoâs May 5, 1862 victory over France in the Franco-Mexico War, Old Palm held a hearty Cinco de Mayo buffet at the Club. The holiday has evolved into a celebration of Mexican culture and heritage, and Old Palm members were definitely in the spirit. The food was bountiful and reflected Mexicoâs most iconic dishes. There were appetizers such as Coconut Lime Shrimp Ceviche and garden-fresh Rosaura Salad. The Taco Bar had all the fixings and featured succulent Cumin Beef, Carnitas Pork and Tinga Chicken, which was prepared with a spicy chipotle chile sauce. There were also main dishes such as Snapper Veracruz, and Adobo Steak and Tequila Lime Chicken on the grill. Members that wanted a little something sweet to top off the meal could be found at the dessert display next to the Ice Cream Sundae Bar. A grande time was had by all.
